Olivia Manning shares recipes

Olivia Manning knows what makes great football food. This NFL mom and wife has had plenty of NFL game-day gatherings and she's shared a couple of her family's favorite recipes with FOX 8:

Shrimp Gumbo
Ingredients
2 tablespoons vegetable oil
2 tablespoons all-purpose flour
2 pounds medium shrimp, peeled and deveined
2 tablespoons vegetable oil
3 cups chopped okra
2 onions, chopped
1 (14.5 ounce) can diced tomatoes
2 quarts water
1 bay leaf
3 cloves garlic, minced
1 teaspoon salt
1 red bell pepper, chopped
Black pepper to taste


Directions
In a large skillet over high heat, add 2 tablespoons oil and flour to the pan, and whisk together quickly. Continue cooking and stirring until a dark roux forms. Stir in shrimp. Cook and stir until the shrimp turns pink then set aside.


In another pan, heat 2 tablespoons oil over medium heat. Stir in okra and onions; cook until okra is tender. Mix in tomatoes. Add water, bay leaf, garlic, salt, red pepper, and the shrimp mixture. Cover, and cook slowly for 30 minutes.


New Orleans Crab Dip

3/4 cup crabmeat
2 tablespoons minced onion
3 tablespoons chopped pimento
1 tablespoon lemon juice
2 tablespoons tomato paste
1/2 teaspoon cayenne pepper
1/4 teaspoon ground celery seed
1 cup dairy sour cream
1 jalapeno pepper


Use canned, frozen or fresh crab meat and remove cartilage. Combine crab meat with onion, pimento, lemon juice, tomato paste, cayenne and celery seed. Mix in sour cream. Serve in a bowl with crackers or bread.


Olivia's Laced Cookies

Ingredients

2 cups old-fashioned rolled oats
1 Tablespoon flour
2 cups white sugar
1/2 teaspoon salt
2 sticks melted butter
2 eggs, beaten
1 teaspoon vanilla

Directions

Put the oats, flour, sugar, and salt into a large bowl and mix well. Pour very hot melted butter over the mixture and stir until the sugar has melted. Add the eggs and vanilla and stir well. Preheat oven to 325 degrees. Cover cookie sheets with ungreased aluminum foil. Drop 1/2 level teaspoon of the mixture on foil, 2 inches apart. Cook for about 10-12 minutes. Watch carefully. When cookies are completely cooled, foil will peel off. Store in airtight container.

Makes about 6 dozen cookies.
