Chef Joe Maynard is busy prepping in Criollo's open kitchen.  He's got plenty on his plate for the New Orleans Wine and Food Experience also known as NOWFE.  Maynard says, "I'm gonna be doing a crab and avocado salad which is chilled and I'm gonna do a grilled an chilled gulf shrimp on top of it.  It comes with a spicy tomato coulis and herb oil."
